Popcorn Marshmallow Messy Cake
We love popcorn!
If we have a movie night, we have to buy popcorn - no matter what the flavour we love it. It's so moreish and yummy, and once you start on a bag you can't stop. Popcorn is my favourite thing to eat, and the kids love it just as much as me.
So when Butterkist invited us to their 'bake off' challenge, I knew this is one the kids would enjoy. Butterkist kindly sent us a huge box of different flavoured packets of popcorn (we were in snack heaven) and some kitchen goodies (chef hats, aprons, wooden sticks etc.) - the kids were rather excited. I asked the kids what popcorn cake we should make and so after looking on the internet, they said they wanted to make the Popcorn Marshmallow cake.
We bought different sweets: M&Ms, smarties, Chocolate buttons, jelly tots etc. and got to work. The cake was so simple to make, it was fun too, and the end cake was delicious. You can see our video below. Summer was the chef, with a little help from me.
Popcorn Marshmallow Messy Cake
Ingredients:
- 1.5 bags of Butterkist popcorn.
- 5x 100g bags of pink and white mini marshmallows
- 125g of unsalted butter
- M&M's
- Smarties
- Chocolate buttons
- Jelly Tots
You can add any sweeties you want in the mixture - it's up to you - you could add pretzels, or nuts or crisps. We're going to try some different treats next time - Jacob wants to add popping candy.
Method:
Prepare a large bundt pan by rubbing some butter on the inside.
In a large bowl, mix the popcorn, with the sweets.
You then melt the 125g of butter in a saucepan and add the mini marshmallows - stir until melted and smooth. Remove from the heat and pour into the popcorn and sweetie mixture. Stir until all the ingredients are combined. You then transfer the mixture into the bundt pan and cover with clingfilm and leave it to cool for at least an hour. (we left it overnight)
When ready to serve the cake, loosen sides of your cake from the pan by running a butter knife around the edges (we also gave it a bash with a wooden rolling pin) and flip the bundt pan over and the cake should come out (eventually).
