Caribbean Food Week with Grace Foods'

It's Caribbean Food Week the 21st - 28th of August. During this week we celebrate all things Caribbean food. And, Grace Foods, the UK’s number 1 Caribbean food and drink company, is at the forefront of celebrations.  

We love joining in and taking part during Caribbean Food Week, this is our 2nd year participating. This year I made some yummy Jerk Chicken kebabs, along with some Rice and Beans, and my new favourite Hot and Fruity Coleslaw. 

Rice and Beans - this is my favourite rice, it's so very yummy and moreish.

Ingredients

  • ¼ cup olive oil

  • 2-3 garlic cloves, crushed

  • ½  onion diced

  • 2 teaspoons mixed spices - paprika, garlic powder, cayenne, dried oregano, dried thyme and salt and black pepper.

  • 2 cups long-grain rice

  • ¾ cups coconut milk

  • Can of red kidney beans, rinsed and drained

  • 2 small bay leaves

  • salt and fresh ground pepper.

Method

Heat the oil in a saucepan. Add the onions, garlic, your mixed herbs mix and sauté for about a minute.

Stir the rice into the pan, along with the beans for about 2 minutes, then add coconut milk, bay leaf and 3 cups of water, bring to a boil reduce heat, cover with a lid and simmer until rice is cooked, about 20 minutes or more. Stir occasionally and add more water if needed.

Then serve and enjoy.

For our Jerk Chicken kebabs, we used Dunn's River Jerk Seasoning, marinating this in chunks of chicken. I then placed the chunks on a skewer and grilled them until done. These were so tasty and so easy to make, and they are officially hubby's favourite.

A sweet and spicy coleslaw that tastes amazing.

Ingredients

  • White cabbage

  • Savoy cabbage

  • Red onion

  • Mango

  • French mustard

  • Cider vinegar

  • Light brown sugar

  • 1.2 tbls hot chilli sauce

  • 100ml olive oil

  • Salt and Pepper

Method

Finely shred the cabbages (loose the cores). Slice the onion and cut the flesh of the mango into slivers.

Then get the mustard, vinegar and brown sugar and mix these up until smooth. Add and mix in, the oil, salt, pepper and chilli sauce. Pour this mixture into the cabbage, onion, and mango and mix.
